QUICK POULTRY SKILLET 
2 c. water
2 tbsp. butter
2 cloves garlic, minced
6 oz. pkg. fast cooking long grain and wild rice
1 1/2 c. cubed cooked chicken
1/2 c. sliced water chestnuts
8 cherry tomatoes, cut in half
3 tbsp. chopped green onion

Combine water, butter, garlic, and contents of rice and seasoning packets in a 10 inch skillet. Bring to a vigorous boil. Cover tightly and simmer until all water is absorbed (about 5 minutes). Stir in chicken, water chestnuts, cherry tomatoes and green onion. Serves 6.
