MICROWAVE CRANBERRY RELISH 
3 c. cranberries
1 1/4 - 1 1/3 c. sugar
1/2 c. water
Grated peel of 1 orange (1-2 tbsp.)

Mix all ingredients in 3 quart casserole. Cover tightly and cook on high 10 to 12 minutes, stirring after five minutes. Make sure the mixture boils. Keep covered and refrigerate for at least 3 hours. Makes 2 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
