BAKED CHEESE CAKE 
1 to 1 1/2 c. graham cracker crumbs
3 tbsp. sugar
5 tbsp. butter, melted
1/4 tsp. cinnamon

FILLING:

12 oz. cream cheese
1/2 c. sugar
2 eggs, separated
1 tsp. vanilla

TOPPING:

1 c. sour cream
1/4 tsp. vanilla
1 tsp. sugar
Dash of almond extract

Beat egg whites until stiff and set aside. Combine crust ingredients and press into bottom of 11 x 7 inch pan (or 9 inch round). Blend cream cheese and egg yolks. Add 1/2 cup sugar and 1 teaspoon vanilla and beat until smooth. Fold in egg whites. Pour into crust. Bake at 350 degrees for 30 minutes. Remove from oven and cool 10 minutes.
