CANNED ZUCCHINI THAT TASTES LIKE
PINEAPPLES
 
1 (48 oz.) can unsweetened pineapple juice
1 gal. coarsely chopped zucchini
3 c. sugar
1 1/2 c. lemon juice
Food coloring (optional)

Combine pineapple juice, zucchini, sugar, and lemon juice; simmer 20 minutes. If desired, add a few drops of food coloring. Pack in pint jars; use 10 pounds pressure for 30 minutes.
