COWBOY STEW | |
4 slices of bacon 1/2 c. onions, sliced 1/2 c. green pepper, chopped 1 clove garlic, crushed 1 1/2 lbs. ground beef 2 cans (1 lb. 13 oz.) each) tomatoes 1 tsp. salt 1 tbsp. chili powder 1 (12 oz.) can whole kernel corn, drained 1 (1 lb.) can red kidney beans, drained 2 c. potatoes, cubed Cook bacon until crisp; drain on paper towel; crumble, reserve. Saute onion, green pepper and garlic in bacon drippings until tender. Add ground beef, cook until well browned, breaking up with fork as it cooks. Add tomatoes, salt, pepper and chili powder. Cover, simmer 30 minutes. Add vegetables; simmer 15 minutes. Sprinkle with bacon. Makes 8 servings. Good served with cornbread. |
