SALMON SALAD 
2 1/2 c. salmon
4 carrots, grated
1/2 c. chopped celery
1 tbsp. chopped ripe olives
1/4 c. chopped parsley
Mayonnaise
Salt & pepper
1 cucumber
French dressing

Mix salmon, carrots, celery, olives and parsley. Add enough mayonnaise to moisten. Season to taste. Garnish with cucumber slices marinated in French dressing. Makes 6 servings.
