SAUCY TOPPED FLOUNDER 
1 lb. flounder fillets
Butter
1/2 c. tartar sauce
Paprika

Preheat oven to 375 degrees. Divide fish into 4 portions; arrange in a 2-quart oblong baking dish. Dot fish with butter. Bake for 10 to 12 minutes or until fish is almost cooked. Remove from oven; carefully drain excess liquid. Spread tartar sauce on each portion of fish. Sprinkle with paprika. Return to oven, bake for 5 more minutes or until fish is fully cooked and sauce is warm.
