CRUNCHY GRANOLA 
5 to 6 c. quick oats
1 c. hulled sunflower seeds
1 tsp. vanilla
1/2 c. Canola oil
1 c. chopped nuts
1 1/2 c. shredded unsweetened coconut
1/2 c. honey

In microwave proof small dish, heat for 30 seconds the vanilla, oil and honey. Oil a 12 x 14 x 3 inch baking dish and combine dry ingredients in dish. Pour warmed liquids over the dry and mix well. Bake at 325 degrees 20 to 30 minutes, stirring every 10 minutes, until lightly toasted. Let cool completely (overnight) and store in airtight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
