SHRIMP SCAMPI 
2 lbs. shrimp, peeled and deveined
1/4 lb. real butter
1/2 c. olive oil
1 tbsp. lemon juice
1/4 c. finely chopped shallots or scallions
Ground black pepper
4 tbsp. finely chopped parsley
Lemon quarters

Preheat broiler to highest temperature. Use a pan big enough to hold shrimp in one layer. Melt butter. Stir in olive oil, lemon juice, shallots, garlic, salt, and pepper. Add shrimp and coat completely with butter mixture.

Broil for 5 minutes, then turn and broil 4 minutes longer. Sprinkle with parsley and serve with lemon wedges.
