SWISS POTATO SOUP
This is a very tasty rib sticking soup for cold weather. It has been in my family for over a hundred years.

6 large potatoes
1 large white or yellow onion
water, enough to cover
4 cloves
2 bay leaves
2 tbsp. all-purpose flour
1/2 to 1 lb. Velveeta cheese, diced
salt, to taste

Peel potatoes and onion. Dice. Cover in salted water. Add cloves and bay leaves. Bring to a boil and simmer til done. Do not drain.

Mash the potatoes and onion in the water. Stir in flour to thicken. Add cheese. Leave on low heat til cheese is melted.

Note: Broccoli or ham may be added for variation or add bacon bits and shredded cheddar cheese on top when serving.
