EASY GARDEN BAKE 
1 c. zucchini, chopped
1 c. tomato, chopped
1 c. onion, chopped (optional)
1/3 c. Parmesan cheese, grated
1/2 c. reduced fat Bisquick baking mix
1 c. fat-free milk
1/2 c. fat-free, cholesterol free egg substitute or 2 eggs
1/2 tsp. salt
1/8 tsp. pepper

Heat oven to 400°F. Grease 9-inch pie plate. Layer zucchini, tomato, onion and cheese in pie plate. Stir remaining ingredients until blended. Pour into pie plate.

Bake for 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Makes 6 to 8 servings.
