GARDEN STUFFED YELLOW SQUASH 
8 to 10 med. yellow squash
1/2 c. chopped green pepper
1 med. tomato, chopped
1 med. onion, chopped
2 slices bacon, fried crisp, crumbled
1/2 c. shredded cheese
1/2 tsp. salt
Dash pepper
butter

Wash squash and simmer in water 8 minutes, or until just tender; drain and cool slightly. Cut a thin slice from top of each squash; remove seeds.

Combine remaining ingredients except butter; mix well and spoon into squash shells. Dot each with a pat of butter and bake at 400 degrees for 20 minutes.

Note: This makes a pretty dish when prepared with zucchini and yellow squash. Yield: 8 to 10 servings.
