FRESH APPLE CAKE 
4 c. apples, peeled and diced
1 c. sugar
1 c. brown sugar
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
2 eggs, beaten
3/4 c. vegetable oil
2 tsp. vanilla
1 c. chopped nuts

Frosting:

8 oz. cream cheese
1 1/2 c. powdered sugar
1/2 tsp. vanilla

Place apples in large bowl and sprinkle with sugars and let stand. Sift flour, soda, cinnamon and salt. Add flour mixture to apples. Add eggs, oil and vanilla; mix well, then add nuts. Spread mixture into greased 9 x 13 pan.

Bake at 350°F for about 50 to 60 minutes. Serve warm or cold with or without frosting.

It is better the 2nd or 3rd day. You can also put ice cream, powdered sugar or Cool Whip on top.
