GRAMMY ZELD'S RICE PUDDING | |
1 c. long grain rice 2 c. water 4 c. milk 1 c. sugar 2 eggs 2 tbsp. cornstarch Bring 2 cups of water to a rolling boil. Add rice. Cover and remove from heat. Let set 1/2 an hour without removing lid. Heat milk and sugar in double boiler. Add rice and cook uncovered for 1/2 an hour. Remove from heat. Combine 2 eggs and 2 tablespoons cornstarch in small bowl. Add 1-2 tablespoons water. Mix very well and add slowly to hot milk mixture with a whisk. Add 1 teaspoon vanilla. Sprinkle cinnamon over pudding, let cool and enjoy. |
