FLAN DE QUESO 
2 c. sugar
2 tbsp. water
1 can evaporated milk (12 oz.)
3 oz. cream cheese
1/2 tsp. vanilla extract
4 eggs

Preheat oven to 350 degrees. Select a baking dish large enough to hold a second baking dish that will be filled with the flan. Fill larger pan with water and place in oven. Make sure the larger dish doesn't over flow in the oven when the second dish is set inside.

In a medium saucepan with a heavy bottom, combine 1 cup of sugar with the 2 tablespoons of water. Stir to dissolve and cook over medium-high heat. Cover briefly to allow steam to wash sugar crystals down the side of the pan.

Uncover and boil until sugar caramelizes and it turns dark golden brown, about 12 minutes. Pour into flan dish and swirl to completely coat bottom with caramel.

In mixing bowl combine evaporated milk, cream cheese and remaining cup of sugar until smooth. Add vanilla extract. Stir just to blend, but don't froth. Strain the flan mixture into lined baking dish. Set inside dish in oven. Bake for 45 minutes or until set. Cool to room temperature before serving.
