POTATO GNOCCHI | |
3 med. potatoes 1 1/2 c. flour (overflowing) 2 tbsp. corn oil 2 eggs, beaten 1/2 c. grated cheese 1/2 tsp. salt 1/4 tsp. pepper 1. Boil, peel and mash potatoes. 2. Combine ingredients in bowl. Mix well. Knead. 3. Form dough into walnut size balls. 4. Roll each ball in a log shape 1/2 inch thick. Roll them in Wonder flour so they do not stick. 5. Cut log into 1/2 inch pieces and leave dough spread out on wax paper or pasta board until ready to cook. 6. Bring large pan of water to a full boil. (1 teaspoon of salt in water optional). Place gnocchi into water and cook at vigorous boil until gnocchi float on top. 7. Drain and serve with spaghetti sauce. |
