FETTUCINI FLORENTINE 
12 oz. pkg. fettucini noodles
12 oz. pkg. frozen chopped spinach
2 tbsp. olive oil
1 onion, chopped
1 red pepper, chopped
2 c. Ricotta
1 1/2 c. milk
1 tsp. salt
1/2 tsp. basil
1/2 tsp. oregano
Black pepper
Grated cheese

Cook noodles. Drain, cover and keep warm.

Defrost spinach in microwave. Drain well.

Cook onion in oil until tender. Add red pepper. Saute briefly. Add spinach. Stir frequently until heated through.

To the cooked fettucini add basil, oregano, spinach mixture, Ricotta, milk and salt. Heat through over low heat, gently tossing to mix.

In serving dish add ground black pepper and grated cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
