POTATO LATKA'S 
7-8 lg. potatoes
1 med. onion
3 eggs, beaten
1/2-3/4 c. flour (+ or - as desired)
Salt & pepper

Shred potatoes and onions either by hand grater or food processor. Note: If you rinse shredded potatoes, they won't discolor. Add to above the beaten eggs and flour; mix by hand. Season with salt and pepper to taste.

Drop in fry pan with hot oil (approximately 1/8-1/4 inch). Flatten to form patties. Fry until golden brown and tender on both sides. Place on paper towel to remove excess oil. Serve with sour cream and a variety of bacon bits, chopped scallions, chives, even applesauce.
