EGGPLANT PUFF 
1 sm. eggplant, peeled and cut, and boiled until cooked, drain water off
1 egg
1/4 c. sugar, granulated
1 c. Bisquick
1/2 tsp. salt

Mix the egg, sugar, Bisquick, and salt together. Then mash the eggplant the eggplant good and add to the mixture; mix well and drop by teaspoonfuls into hot Crisco oil, a few at a time, works better. When brown on one side, flip over and brown. Drain on paper towel. (You can't eat just one.) Makes about 3 dozen puffs. I use ice-tea spoons, don't make the puffs too big.
