SAVORY ONION RELISH 
Butter flavored vegetable cooking spray
4 lg. onions, quartered and thinly sliced
1/4 c. white wine vinegar
2 tbsp. brown sugar
1/2 tsp. pepper
2 tbsp. chopped fresh thyme

Coat a large skillet with cooking spray. Place over medium heat until hot. Add onions, cover, reduce heat, and simmer 2 hours (stirring occasionally). Add remaining ingredients; cook, uncovered, stirring frequently until slightly thickened, about 3 minutes. Cool and serve at room temperature. Makes 3 1/2 cups. 14 calories per tablespoon.
