THE MOST ELEGANT CHICKEN
CASSEROLE
 
4-6 chicken breasts
1/3 c. flour
2 tsp. salt
1 tsp. paprika
1/4 tsp. butter
4-6 slices cooked ham
1 tsp. dried savory, crumbled
Celery leaves
1 c. sliced fresh mushrooms
1/4 c. sauterne
1 c. sour cream

Combine flour, salt and paprika in paper bag; shake chicken breasts in bag one at a time until well coated. Brown lightly in butter in electric or heavy iron skillet. Place ham slices in a casserole with a little savory and a few celery leaves on each. Cover with chicken. Add cleaned fresh mushrooms.

Pour wine into skillet chicken was browned in and stir well. Add remainder of seasoned flour to sour cream (keeps it from curdling during baking time), then blend with drippings. Pour over chicken. Cover and bake in moderate oven at 350 degrees for 1 hour. Serve with spiced fruit.
