CHICKEN CASSEROLE 
2 cups cooked chicken, chopped
1/4 cups chopped onions
1 cup cooked rice
1 tbsp lemon juice
1/2 cup mayonnaise
3 chopped boiled eggs
1 can cream of chicken soup
salt and pepper to taste
1 stick of butter
1 sleeve of ritz crackers

Mix all ingredients except butter and crackers thoroughly and pour into baking dish. Melt one stick butter and mix with 1 sleeve of ritz crackers (crushed). Put on top of other ingredients.

Bake at 350°F for 30 to 40 minutes.
