PORCUPINE BALLS | |
My mom gave me this easy recipe. I usually do half a recipe for my family. 2 lb. ground beef chuck 2 lb. mild or hot sausage 1 large onion dash nutmeg salt and pepper, to taste 2 cups crushed saltines 2 cups long grain rice 4 (10 oz. ea.) cans tomato soup Preheat oven to 350°F. Mix all ingredients together. Form into 1 to 2-inch balls. Arrange in a large baking pan deep enough for soup to cover balls. Mix soup per can directions and pour over balls. Bake, covered, at 350°F for 1 hour. Serve with mashed potatoes and coleslaw. Submitted by: SJ Evans |
