STUFFED ARTICHOKES 
1/3 c. oil
4 med. artichokes, trimmed, cooked and chokes removed
1 c. finely chopped parsley
1 lg. clove garlic, chopped
1/2 c. Parmesan cheese
1/8 tsp. pepper
Paprika
1 c. finely chopped onion
1 c. finely chopped celery
3 c. fresh bread crumbs
1 tsp. salt
1/2 tsp. oregano

In skillet heat oil; add onion, parsley, celery and garlic. Cook over medium heat, stirring often until celery is almost tender, 5-10 minutes. Remove from heat. Stir in bread crumbs, Parmesan cheese, salt, pepper and oregano.

Gently spread leaves of cooked artichokes and spoon mixture into center and leaves. Sprinkle with paprika. Place in baking dish - DO NOT CROWD. Cover with foil. Bake at 350 degrees for 45 minutes. Double or triple recipe for larger artichokes. Also good for stuffing mushrooms.
