LEFT OVER BEEF AND RICE
CASSEROLE
 
1/2 c. dry rice
1 or 2 onions, chopped
2 stalks celery, chopped
Green pepper, chopped
1 c. beef gravy
1 c. canned tomatoes
2 c. left over beef cut in sm. pieces
Salt & pepper

Brown dry rice in a small amount of fat. Meanwhile, in a saucepan simmer onion, celery, green pepper, gravy and rice; mix well and put in casserole. Bake at 350 degrees for 1 hour. Stir once or twice and add water if needed.
