RHUBARB BARS | |
1 1/2 c. granulated sugar 1/2 c. butter 2 eggs 1 tsp. lemon juice 2 1/2 c. flour 1 scant tsp. baking soda 2 tsp. baking powder 1 1/2 c. rhubarb, diced 1 c. seedless raisins 1/4 c. water Cream together sugar and butter. Add eggs (one at a time); cream well. Add lemon juice. Set aside. Cook until mushy rhubarb, raisins and water. Sift flour, soda and baking powder. Blend all ingredients and spread on a cookie sheet. Sprinkle sugar on top. Bake at 350 degrees about 25 minutes. |
