VEGETABLE MEDLEY 
4 tsp. oil
1 lg. onion
2 c. sliced carrots or frozen
2 med. zucchini squash, sliced
1 to 2 c. broccoli flowerets
1 to 2 c. mushrooms, sliced (optional)
8 oz. V-8 juice
White pepper
Salt
Sweet basil

Saute onion, carrots, squash, broccoli and mushrooms in skillet in oil. Add V-8 juice and spices and saute until vegetables are tender but still crisp. Serves 4.
