HAMENTASCHEN 
1/2 c. butter, softened
1 c. sugar
1 egg
2 tbsp. orange juice
1/2 tsp. vanilla
2 c. sifted flour
2 tsp. baking powder
1/4 tsp. salt
Jam or canned filling, apricot, prune or poppy seed

Preheat oven to 400 degrees. Cream butter and sugar. Add egg, juice and vanilla. Mix well. Add dry ingredients. Mix well. Cover with Saran Wrap and refrigerate for 3 to 4 hours.

Roll out to 1/4 inch thickness on a floured surface. Cut into circle shapes.

Put 1/2 teaspoon jam or canned filling in middle. Fold three ends of circle to middle to form a triangle. Bake at 400 degrees for 10 to 12 minutes. Transfer to cooling rack immediately.

This cookie is a traditional cookie for the Jewish holiday of Purim.
