GINGERSNAPS 
3 tbsp. softened butter
1/3 c. sugar
1 egg white
2 tbsp. molasses
1 tbsp. unsweetened orange juice
1 3/4 c. plus 2 tbsp. self-rising flour
3/4 tsp. ground ginger
1/2 tsp. ground cinnamon
1/8 tsp. ground cloves
2 tsp. sugar
Vegetable spray

Cream sugar (1/3 cup) and butter together with electric mixer. Add egg white, mixing well. Add molasses and orange juice, mixing well. Combine flour and the next 5 ingredients. Gradually add flour mixture to molasses mixture, mixing well.

Shape dough into 1 inch balls; roll balls in 2 teaspoons sugar. Place balls 4 inches apart on cookie sheets sprayed with vegetable spray. Flatten balls with the bottom of a glass. Bake at 350 degrees for 6-8 minutes or until browned.
