CRAB QUICHE | |
4 eggs, beaten 2 c. light cream 1/3 c. minced onion 1 tsp. salt 1/8 tsp. cayenne pepper 1 lb. crabmeat 1 c. shredded Swiss cheese 1 tbsp. fresh snipped parsley Heat oven to 425 degrees. Prepare pie crust. Beat eggs and stir in cream, onion, salt and cayenne pepper. Drain crabmeat. Line pie shell with cheese and cover with crabmeat. Pour egg mixture over the crabmeat and sprinkle with parsley. Bake 15 minutes and reduce oven to 300 degrees. Bake for about 30 minutes or until knife inserted 1" from edge comes out clean. Let stand 10 minutes before cutting. |
