3/4 c. shortening
2 c. brown sugar
2 eggs
4 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. lemon flavoring
1 c. strong coffee

Beat shortening, sugar and eggs until creamy. Add dry ingredients alternately with coffee. Add lemon and drop by teaspoon on greased cookie sheet. Bake at 350 degrees for 8-10 minutes. Drizzle with confectioners' sugar icing that is flavored with lemon. This cookie freezes well.
