JIFFY MINCE COFFEE RING 
2 c. flour
2 1/2 tsp. baking powder
1 egg, slightly beaten
3/4 c. mincemeat
3/4 c. sugar
1/2 tsp. salt
1/3 c. shortening
1/2 c. milk

ICING:

2 tbsp. butter
1 c. sifted confectioners' sugar
3 tbsp. hot milk
1/8 tsp. salt

Sift dry ingredients, cut in shortening until mixture resembles coarse meal. Combine egg, milk, mincemeat and add to dry ingredients. Mix only until dampened. Turn into a well greased 9 inch ring mold. Bake at 375 degrees for 30 to 35 minutes. Frost while ring is still warm. Combine frosting ingredients. Beat until smooth. Pour over ring. Icing will run down sides.
