APPLE MERINGUE PIE 
1 1/4 c. flour
1/2 c. sugar
6 tbsp. butter
3 egg yolks

FILLING:

1 1/2 lb. apples, peeled & sliced
1/3 c. sugar
Juice from 1 lemon

MERINGUE:

3 egg whites
1/3 c. sugar

Mix ingredients for crust. Roll out dough and place in pie tin. It probably won't go on as one piece, so mend it together where needed. Mix ingredients for filling and pour on crust. Bake at 350 degrees until crust is almost brown, about 1 hour (check after 45 minutes). Then, in a bowl, beat egg whites until stiff. Add sugar bit by bit, continuing to beat a little more. Spread on pie and bake until meringue is brown.

Let the pie sit out for a while and the meringue will get pretty little "beads" on it. You can freeze it, but be careful that nothing touches the meringue. Thaw before serving.
