RED VELVET CAKE 
2 c. Wesson oil
2 1/2 c. plain flour
1 1/2 c. sugar
1 c. buttermilk
2 eggs
2 tsp. cocoa
1 tsp. vinegar
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
Red food coloring

Beat eggs well. Add sugar and oil. Mix thoroughly. Add sifted flour, cocoa, soda and salt. Add buttermilk, vinegar, vanilla and food coloring. Beat thoroughly. Bake 35 minutes for 2 layers, 12 to 15 minutes for 4 layers.

ICING:

1 box confectioners' sugar
1 stick butter
1 (8 oz.) cream cheese
1 tsp. vanilla
1 c. chopped pecans
Red food coloring

Combine.
