ZUCCHINI CASSEROLE 
1 c. red onion rings
1/4 c. butter
4 tomatoes, wedged
Salt & pepper
2 c. sliced zucchini
1 c. green pepper rings
Parmesan cheese

Saute' onion and green pepper in butter. Add zucchini and saute until tender. Add tomatoes and cook until soft. Season with salt and pepper. Pour into a 1 quart baking dish and sprinkle with Parmesan cheese. Bake at 375 degrees until top browns.
