EASY COTTAGE BAKED POTATOES 
4 med. sized baking potatoes, cut in half lengthwise
1 c. low fat cottage cheese, drained
1/2 c. skim milk
2 tbsp. minced onion and pepper to taste
Minced parsley
Paprika
Garlic

Bake potatoes. Scoop out pulp, carefully reserving shells. In food processor; combine potato pulp with low fat cottage cheese, skim milk, minced onion and pepper. Mix thoroughly. Spoon mixture into shells. Sprinkle with paprika and minced parsley.
