CHEDDAR CHEESE POTATOES | |
6 tbsp. melted butter 3 lg. Idaho potatoes, scrubbed and thinly sliced (about 1 1/2 lbs.) Salt and freshly ground pepper to taste 3/4 c. grated Cheddar cheese Cover bottom of 6 inch skillet with butter. Layer potatoes in bottom of skillet, overlapping slightly; drizzle with more butter and season with salt and pepper. Repeat layers until all potatoes are used. Place over medium heat until butter is hot and sizzling. Reduce heat to low and cook, covered, about 30 minutes or until potatoes are tender and bottom layer is browned. Sprinkle with cheese, cover and heat a few minutes until cheese melts. Invert on serving platter. Makes 4 to 6 servings. |
