RAINBOW SLAW 
1/2 c. peanut oil
2 tbsp. peanut butter
1 tbsp. ground ginger
1/4 c. rice vinegar
1 tbsp. soy sauce
1 tbsp. brown sugar
1/2 lb. shredded red cabbage
1/2 lb. shredded green cabbage
2 lbs. julienned carrots
1 red or yellow pepper, cut in strips
1/4 lb. snow pea pods, cut in strips

Whisk together first 6 ingredients. Add rest of ingredients. Refrigerate. Serves 6 to 8.
