PRIZE WINNING BLUEBERRY PANCAKES 
1 c. all-purpose flour
1 tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1 beaten egg
1 c. milk
2 tbsp. cooking oil
1/2 pkg. frozen blueberries

In a mixing bowl stir together flour, sugar, baking powder and salt. In another mixing bowl combine egg, milk and cooking oil. Add to flour mixture all at once. Stir mixture just until blended, but still slightly lumpy. Add the blueberries.

Pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy griddle skillet. Makes 8-10 pancakes.
