DAD'S CHILI 
1 lb. ground beef, lean
1 lb. pork sausage
1 lg. onion, diced
1 lg. green pepper, diced
1 lb. cooked pinto beans
1 lg. can crushed tomatoes
1 sm. can stewed tomatoes
1 bottle beer (optional)
4-8 tbsp. chili powder
Chopped garlic, to taste
1 tsp. oregano
Red pepper, to taste
Salt and black pepper, to taste

In a skillet, brown ground beef and sausage. Drain the fat and add diced onion. Cook in a large pot until the onion is soft. Add diced green pepper and cooked pinto beans, with some of the cooking liquid. I soak the beans overnight and cook them in liquid to cover, plus an onion stuck with four cloves. (Remove the onion when cooked.)

Add crushed tomatoes, stewed tomatoes and the bottle of beer. Mix with remaining ingredients; simmer 3+ hours, stirring occasionally.
