IRISH CHAMP WITH CRISPY ONIONS 
Champ (previous recipe)
Butter
2-3 large onions, cut into 1/4 inch wide rings

Melt butter in frying pan and cook onions until nicely browned.

Put a large helping of Champ on each dinner plate, topping with crispy onions around the edge.

Make a well in the center of each serving and put in a lump of butter.

Dip a forkful of the champ and onions into the butter and enjoy.
