TOAD IN THE HOLE 
2-3 lb. chicken fryers, cut up (sausage can be used in place of chicken)

Preheat oven to 425 degrees (with baking dish) and 2 tablespoons shortening, after chicken has been browned.

BATTER:

1 1/2 tbsp. melted butter
2 c. milk
5 eggs, just blended
2 c. flour
1 tsp. salt

Mix together, batter can be lumpy.

Brown chicken. Make batter. Heat dish with shortening very, very hot. Swirl shortening around dish. Pour batter into dish and put browned chicken into batter. Put dish into 425 degree oven for 25 minutes. Reduce oven to 350 degrees for 15 minutes. Turn oven off and let sit in oven for 5 minutes then serve. Add other spices during browning of chicken.
