GRILLED FLANK STEAK ITALIANO 
1 1/2 lb. flank steak
1 tsp. dry basil
1 (6 oz.) pkg. dry salami, sliced
1 sm. mild white onion, thinly sliced
1 (6 oz.) pkg. Provolone cheese

Make pocket in steak. Sprinkle insides evenly with basil. Arrange 1/2 of salami slices over bottom. Add all of the onion slices, cheese, then remaining 1/2 of salami. Use wooden skewers to close opening.

Place steak on a grill 4-6 minutes above medium glowing coals. Cook 7-8 minutes each side for medium rare. Carve diagonally across grain.
