SAVORY STUFFED SALMON 
1 salmon (4 lbs.) dressed
2 1/2 tsp. salt
3/4 c. diced celery
1/2 c. chopped onion
1/4 c. butter, melted
4 c. seasoned bread crumbs
1/4 c. peeled and diced lemon
2 tsp. grated lemon rind
1 tsp. paprika
2 tbsp. oil

Prepare fish by washing and drying well. Sprinkle inside with 1 1/2 tsp. salt.

Cook celery and onions in butter. Combine with all other ingredients except oil and mix well. Stuff fish loosely, and place on a greased bake and serve platter. Brush with oil.
