RATATOUILLE 
6 zucchini, cut into bite size pieces
1/4 lb. mushrooms
1 med. eggplant, peeled and cubed
2 sm. bell peppers, diced
2 onions, sliced
1/4 c. olive oil
2 cloves garlic, minced
2 tsp. salt
1 tsp. basil
1/2 c. parsley
3 lg. tomatoes
Swiss cheese, grated

Simmer all ingredients except tomatoes for 30 minutes. Drain some of liquid. Place mixture in 9 x 13 inch baking dish. Add tomatoes, cut into wedges. Cover with thick layer of grated Swiss cheese. Bake at 350 degrees for 30 minutes.
