QUICK QUICHE 
1 med. onion
1 c. asparagus or spinach
1/2 lb. mushrooms
1/2-1 c. chopped ham or bacon
1-1 1/2 c. shredded cheese
4 eggs
1 can cream of mushroom soup
Pepper to taste

Chop and saute vegetables (fresh or frozen). Mix in meat. In a bowl; beat eggs, add soup and blend in vegetable-meat mixture. Mix in approximately 1-1 1/2 cups shredded cheese (medium or aged Cheddar). Pepper to taste. Pour into an uncooked pie crust. Bake at 350 degrees for about 1 hour, or until an inserted knife comes out clean. Cool 5 minutes before serving.
