BARBECUED SALMON 
3/4 c. apple cider
6 tbsp. soy sauce
2 tbsp. unsalted butter
1 lg. garlic clove, crushed
2 salmon fillets, 2 1/2 to 3 lb. each

In a small saucepan, combine cider and soy sauce. Bring to a boil over high heat. Then reduce and simmer for 3 minutes. Add butter and garlic and continue to cook for about 20 minutes. Remove from heat and cool. Pour marinate over salmon and let stand for 30 minutes to 1 hour.

Cook on grill skin side down, covered with a foil tent, 15 to 20 minutes or in oven on oiled broiler rack 12 to 15 minutes. Serves 8 to 10.
