NEVER FAIL MERINGUE FOR LEMON
PIE
 
1 tbsp. cornstarch
2 tbsp. cold water
1/2 c. boiling water
3 egg whites
6 tbsp. sugar
1 tsp. vanilla extract
Pinch of salt

Blend cornstarch and cold water in a pan. Add boiling water and cook, stirring until thick and clear. Let stand until cold. Beat egg whites until foamy, gradually add the sugar. Beat on high speed. Beat well. Pour lemon filling into your crust first and then your topping. Bake at 350 degree for about 10 minutes.
