MICROWAVE POLENTA 
1 1/2 c. corn meal
4 c. cold water
1 1/2 tsp. salt

Place cornmeal in a 3 quart glass casserole. Add water and salt. Stir well. Microwave on high, uncovered, for 5 minutes. Stir well. Microwave on high 5 minutes longer. Stir well and let stand, covered for 3 to 5 minutes before serving. Serve in the same bowl!

Note: Some microwave ovens may require a longer cooking time.

Since microwave ovens vary in power, you may need to adjust your cooking time.
