SAUSAGE-POTATO SCALLOP 
1 lb. pork sausage (bulk)
4 med. potatoes (4 c.)
1 c. sharp cheese
Flour
Salt

In skillet brown sausage, breaking up as it cooks. Drain. Peel and thinly slice potatoes. Place half the potatoes in a 2 quart casserole. Sift two tablespoons all-purpose flour and 1/8 teaspoon salt over potatoes. Top with half the sausage and 1/2 cup shredded cheese. Repeat with remaining potatoes, 2 tablespoons flour, 1/8 teaspoon salt, remaining sauce and 1/2 cup shredded cheese. Pour 1 1/2 cups milk over all. Cover. Bake at 350 degrees for 50 to 60 minutes or until potatoes are done. Uncover; bake 10 minutes more.

Makes 4 to 6 servings.
